Swimming Between Superpowers - Nuala Moore
Written by LorcanIt’s still quite surreal to think that we have swum across the Bering Strait from Russia to the United States but we did. The swim was organized and conducted by the Ministry of Defense of Russia, under the leadership of the Eastern Military District Commander Admiral Sidenko KS, the Ministry of Defence allocated for this purpose hospital ship "Irtysh". Also three Zodiacs, a tug for guidance and experienced military rescue divers able to cope with a boat in the waves up to 5-6 meters and winds of up to 15-16 mps and a full working hospital staff. It was operated as a military project and therein lay its success.
We arrived in Moscow and picked up many of the team, boarded an arranged flight to the Yatutsk Region. From there we boarded a military flight to Petropavlovsk-Kamchatsky. No air hostess to tell us to sit down or put on the seatbelts for the 3 hour flight. Not for the

Many in Ireland are familiar with the sight of one of the most visible monuments in the rural landscape today, the tower-house (often referred to as a ‘castle’), thanks particularly to the well-preserved examples in Blarney (where one ‘kisses the stone’) and Bunratty, home of the ‘medieval banquet’. They were built as the fortified residences of the better-off members of the Anglo-Irish and Irish gentry alike. We have several examples here in Corca Dhuibhne, all in various states of ruin, apart from that at Gallarus which was restored in recent years. It is situated not far from the much better known ‘oratory’, in the same townland.
Classic Lemon Tart - Mark Murphy
Written by LorcanA good lemon tart is such a popular dessert with so many people. It is a classical French dessert or otherwise known as ‘Tarte au Citron’. It is a relatively easy tart to make even for total beginners. What you want is a really nice crisp pastry with a silky lemon filling.
The recipe for the sweet pastry may be different from other sweet recipes you may have. However the end product provides a really good pastry and an easy pastry to work with.
For the sweet pastry:
120 g unsalted butter, at room temperature, diced
75g icing sugar, sifted, plus extra for dusting
3 egg yolks
250 g plain flour
2 tablespoons water
Lemon Tart
Sweet pastry
For the lemon filling for a 28cm tart tin
9 free-range eggs
300m double cream
350g caster sugar
6 large lemons, finely grated zest and juice
Lemon filling for a 23cm tart tin
5 free-range eggs
125ml double cream
225g caster sugar
4 lemons, juice and zest

Seeing all the new kids off to school for the first time has stirred a buried memory in WKL’s medical correspondent. One he’d rather had stayed buried… I’m reminded of an incident in Sr. De Sales’ classroom, 1984, involving wet trousers, a puddle of pee under my desk, and pure scalding red shame.
Bed wetting is the more common occurrence, however, and that’s the focus for this edition. The first thing to say, is that it’s very common – and apart from being a nuisance it’s usually only serious if it knocks confidence or causes a lot of stress. Almost 1 in 3 five year olds will occasionally wet the bed – at this age we almost consider it normal, and really only start thinking about it as a problem if it’s still happening at 6 or 7years. However almost 1 in 10 kids will still occasionally wet the bed at age 10.
Back to school and so much to do - uniforms, books, travel arrangements and a new routine - the humble lunch box is often at the end of a long list of things to do. For most, the lunch box fills a gap between breakfast and dinner, and once it staves off hunger at school - job done!
Nothing could be further from the truth. Lunch and the mid-morning snack need to fuel the child - both physically and mentally - the type of fuel used has a huge influence on performance in and out of the classroom. Good food choices provide our young ones with sustained energy, improve concentration levels and satisfy hunger - the food they eat can also improve immunity and stave off many of the colds, flus and bugs that plague many school children during the term. The opposite effects of nutritionally poor food include fluctuations in energy levels ranging from lethargy and fatigue to hyperactivity and restlessness, flagging concentration and poor recall as well as constant colds and flu symptoms right throughout the school year. If there was a magic pill that would ensure our children were healthy and alert at school there is no doubt, as parents, we would be stocking up now. The choices we make for them when packing their lunch boxes IS that magic pill - so here are a few ideas to get all they need in a handy, ready-to-eat meal.
